Ingredients:
1 head of red leaf lettuce, 4 large leaves removed (the rest roughly chopped)
1 pt. strawberries, sliced
4 oz. goat cheese, crumbled
¼ cup pine nuts, toasted
1 red onion, thinly sliced
2 Tbsp. rice wine vinegar
1 Tbsp. sugar
1 Tbsp. Dijon mustard
2 Tbsp. poppy seeds
4 Tbsp. olive oil
salt & pepper to taste
Method:
In mixing bowl, combine vinegar, mustard, salt & peppers, sugar and poppy seeds. Blend in olive oil.
In larger mixing bowl, toss chopped lettuce with strawberries, goat cheese, pine nuts and onions.
Toss salad with dressing to coat well. Place a leaf on each plate and top with tossed salad. Serves 4.
